Ingredients

  • 3-4 large russet potatoes
  • Ice water (for soaking)
  • Paper towels (for drying)
  • Oil, for frying (or roasting)
  • Meat Mitch French Fry Seasoning
  • 1 cup shredded cheese (your favorite melting cheese)
  • Splash of milk
  • 6-8 strips bacon, cooked and crumbled
  • ½ cup chopped hatch green chiles (roasted, peeled, and chopped)
  • 1 extra-large tomato sauce can (both ends removed)

Instructions

  1. Prep the fries: cut russet potatoes into thin matchstick fries. Soak them in a bowl of ice water for at least 30 minutes to remove excess starch. Drain and pat completely dry with paper towels.
  2. Cook the fries: fry in a deep fryer or heavy pot of hot oil until golden and crispy — or roast in a 450°F oven for about 45 minutes, flipping halfway through, until golden brown. Immediately sprinkle generously with Meat Mitch French Fry Seasoning while tossing to coat.
  3. Make the cheese sauce: melt shredded cheese using the double-boiler method (heatproof bowl over simmering water). Add a splash of milk and stir gently until smooth and creamy. Alternatively, melt low and slow in a saucepan, stirring often.
  4. Build the fry tower: place the cleaned tomato sauce can (bottom and top removed) on a serving plate. Inside the can, layer seasoned fries, bacon crumbles, cheese sauce, and chopped hatch chiles. Repeat layers until the can is full, finishing with a generous pour of cheese.
  5. The big reveal: gently lift the can straight up to release your towering masterpiece. Watch as the fries, bacon, chiles, and cheese cascade into a skyscraper of flavor.
