Hatched! Two-Step Texas Chili

A two-step Texas-style chili built on rendered bacon, Meat Mitch Hatched! Seasoning, and your choice of ground beef or leftover smoked meat.

Ingredients

  • 1 pound bacon, crumbled
  • 4 large garlic cloves, minced
  • 2 yellow onions, diced
  • 3 tablespoons canned diced green chiles
  • 2¼ cups beef broth
  • ¼ cup Meat Mitch Hatched! Seasoning
  • 1 can (28 ounces) diced tomatoes, liquid drained
  • 2 cups beef broth
  • 2 pounds ground beef, or 2 pounds leftover BBQ meat (brisket, pulled pork, etc.)
  • Assorted garnishes: chopped raw white onion, shredded cheddar cheese, sliced jalapeños, sour cream

Instructions

  1. Step 1: in a large stockpot, render the bacon until crispy. Remove the bacon with a slotted spoon and drain most of the bacon grease into a container for later use.
  2. Sauté the onion and garlic over medium heat in the remaining bacon grease for 15 minutes, until the onions are soft and translucent. (If using ground beef instead of leftover BBQ, mix it with 1 tablespoon Hatched! Seasoning and brown it now.)
  3. Add the green chiles, broth, and Hatched! Seasoning. Bring to a boil, then turn down to a simmer. Simmer for 20 minutes, covered, until the onions are soft.
  4. Step 2: add the tomatoes and remaining broth and stir. Bring to a boil, then turn down to a simmer. If using leftover BBQ, add it now. Simmer for 20 minutes, or until slightly thickened. Add more seasoning to taste.
  5. Once thickened to the desired consistency, ladle into bowls and serve with your favorite garnishes. Let's get Hatched!
