  1. Prep the salmon: pat the fillets dry with paper towels. Generously season all sides with Meltdown Yaki Bomb Seasoning, pressing it lightly into the fish to help it adhere.
  2. Cook the salmon: preheat the grill to medium-high heat, around 400°F. Place the salmon on the grill and cook until it flakes easily with a fork and reaches your preferred internal temperature.
  3. Make the Yaki Bomb glaze: while the salmon cooks, add additional Meltdown Yaki Bomb Seasoning to a small saucepan with a little butter or oil. Warm over low heat, stirring until the seasoning melts down into a smooth, glossy glaze.
  4. Glaze the salmon: during the final few minutes of cooking, brush the salmon generously with the melted glaze.
  5. Finish and serve: remove the salmon from the grill and spoon or brush on another layer of the glaze while still hot. Serve immediately.
  6. Mitch Tip: the secret is using Yaki Bomb twice -- the first layer seasons the salmon while it cooks, and the melted finish creates that rich, glossy coating that takes it over the top.
