Ingredients

  • 6 boneless, skinless chicken thighs
  • 2 tablespoons Meat Mitch Yaki Bomb Meltdown Seasoning, plus more for finishing
  • 1-2 tablespoons olive oil
  • Splash of fresh lemon juice
  • Salt, to taste
  • Black pepper, to taste
  • 3 cups cooked jasmine rice
  • 1 cucumber, sliced
  • 1-2 carrots, shredded or thinly sliced
  • 1 avocado, sliced
  • Meat Mitch Miso Naughty Japanese Whomp Sauce, for drizzling
  • Sesame seeds, for garnish
  • Green onions, thinly sliced, for garnish

Instructions

  1. Marinate the chicken: place the chicken thighs in a bowl or resealable bag. Add olive oil, a splash of lemon juice, Yaki Bomb Meltdown Seasoning, salt, and pepper. Toss until evenly coated. Marinate at least 30 minutes before grilling.
  2. Grill the chicken (quick cook): preheat the grill to 400°F. Grill the chicken thighs about 4 minutes per side, or until the thickest part reaches 165°F internal temperature.
  3. Or, low and slow: set the grill to 180°F and cook the chicken about 30 minutes. Increase the temperature to 275°F and continue cooking until the chicken reaches 165°F internal temperature.
  4. Remove the chicken from the grill and finish with an extra sprinkle of Yaki Bomb Meltdown Seasoning. Loosely cover with foil and let rest 10 minutes before slicing.
  5. Build the bowls: divide the cooked jasmine rice among serving bowls. Top with sliced grilled chicken, cucumber, carrots, and avocado.
  6. Make it Miso Naughty: drizzle each bowl generously with Miso Naughty Japanese Whomp Sauce. Finish with sesame seeds and sliced green onions. Serve immediately and get Miso Naughty.
