Ingredients

  • 1 yellow onion, minced
  • 3 cloves garlic, minced
  • 3 tablespoons leftover bacon drippings, unsalted butter, or vegetable oil
  • 1 cup dried breadcrumbs
  • ¾ cup whole milk
  • 3 large eggs, lightly beaten
  • 1 tablespoon kosher salt
  • 2 teaspoons freshly ground black pepper
  • ¼ cup finely chopped flat-leaf parsley
  • 2 pounds ground beef (preferably 80 percent lean)
  • 1 pound raw pork sausage or ground pork
  • 2 cups shredded sharp cheddar cheese
  • ½ cup Meat Mitch Steer Season Rub
  • 1 cup Meat Mitch Competition WHOMP! BBQ Sauce

Instructions

  1. Set your smoker to 260°F and get a good smoke rolling -- use smaller pieces or chips so the loaf takes on plenty of smoke. Line a cookie sheet with parchment paper.
  2. In a sauté pan over medium-high heat, melt the bacon drippings. Add the onion and cook, stirring frequently, until soft and translucent, about 5 minutes. Add the garlic and cook 2 more minutes. Remove from the heat and set aside.
  3. In a large mixing bowl, combine the breadcrumbs and milk. Let soak 15 minutes until soggy. Whisk in the eggs, salt, and pepper. Add the parsley, beef, pork, and cheddar and mix by hand just enough to bring the ingredients together.
  4. Mound the meat mixture on the prepared baking sheet and form into a log shape. Season the loaf with Meat Mitch Steer Season Rub and place in the smoker.
  5. Insert a probe thermometer into the middle of the loaf and set the alarm for 160°F internal temperature, which will take about 2 hours. Close the lid and grab a beer.
