Instructions

  1. Gently mix together the 80/20 ground beef and minced smoked brisket in a bowl.
  2. Roll the mixture into 4 oz balls and season with Steer Season Rub. This makes 16 four-ounce burger balls -- enough for 8 double brisket cheeseburgers.
  3. For the buns, spread mayonnaise on the inside and outside and quickly toast them on a hot griddle. Remove and set aside once toasted.
  4. Place the burger balls on the hot griddle and, using parchment paper and a heavy burger press, smash each one down into a thin patty. After about a minute, once a nice crust has formed, flip the burgers and add cheese.
  5. After another minute, once the cheese has melted, stack one burger on top of another to create the double cheeseburger. Remove from the griddle and let sit a minute to drain excess grease.
  6. Make the sauce: in a small bowl, combine 1 tablespoon each of Yellow Brick Road, White Sauce, and Stay Hot Sauce. Stir until uniform in color.
  7. Add the double cheeseburgers to the toasted buns, add your favorite toppings and the triple-mix sauce, and have a party.

Double the brisket, double the reason to have a party.
